Oysters - Fresh From
the Water;
Almost every day we bring in oysters from the oyster farms of Washington, Oregon, California and British Columbia and also from the east coast for the summer months. We then "wet store" the bags of oysters in Penn Cove or in our certified 3000 gallon wet storage facility on shore, thereby allowing us to always keep the oysters in the best of conditions in cold water. "Fresh from the water" instead of "fresh out of the cooler" makes all the difference when selling shellfish, especially for oysters meant to be served raw on the half shell. Water spilling from the shell and the fresh sea smell as the oyster is shucked is a sure sign of freshness, it is something you should expect! Out of the water and to you in less than 24
hours means happy oyster customers and increased oyster business for you and
