Almost every day we bring in oysters from oyster farms across Washington, Oregon, California and British Columbia. We then wet store the bags of oysters in Penn Cove or in our certified 3,000 gallon wet storage facility, allowing us to always keep the oysters fresh and ready for harvest.

Fresh from the water instead of fresh out of the cooler makes all the difference when selling shellfish, especially for oysters meant to be served raw on the half shell.

Out of the water and to you in less than 24 hours means happy oyster consumers and increased oyster business for you and your customers.

 

Water spilling from the shell, filling the air with fresh sea aroma as the oyster is shucked is a sure sign of freshness; it’s something you should expect!

FARMING OYSTERS 

Oysters have been farmed since Roman times and in many areas things are done much the same as they were back then, because they still work. However, there has been quite a leap in farming methods which has allowed oysters to be farmed in many areas much more efficiently or in areas where it would not have been possible before. There are four main types of oyster farming carried out in North America.
